Hi friends, I would like to share with you one of my favorite salads, Kohlrabi Thai style salad (similar to green papaya Thai salad). This is a refreshing dish with the sour taste from fresh lemon, slightly sweet of palm sugar and spicy (adjust to your level) from red chilies. It is easy to make and you don’t need the big mortar and pestle to make this dish!
An easy thai salad to prepare that is made with Kohlrabi and dried shrimp. This Thai Inspired Kohlrabi Slaw is a refreshing salad to have in the summer. A refreshing salad that is sweet and sour with a spicy punch!
Ingredients:
2 cups kohlrabi
2 cloves garlic
1 Thai chilies or more to taste
2 1/2 Tbsp palm sugar
2–3 long beans
3 Tbsp roasted peanuts
3 Tbsp small dried shrimp
2 1/2 Tbsp fish sauce
3 Tbsp fresh lime juice
1/2 cup grape tomato
Preparation:
Cut kohlrabi into thin strips and soak them in ice water for 10-15mins.
Using a mortar and pestle pound garlic and chilies.
Add palm sugar and continue to pound until it becomes powder and dissolved.
Add dried shrimp and peanuts and pound to break the peanuts up slightly.
Add long beans and pound slightly until they’re broken.
Add fish sauce and lime juice, adding the lime skin as well for extra lime fragrance but do not eat the lime skin. Mixed well with a large spoon to dissolve the sugar.
Cut the grapes tomatoes in half.
Drain the soaked kohlrabi well and place them in paper towel to absorb excess water.
Add shredded kohlrabi and tomatoes, and slightly pouding the mixture just until the tomatoes are crushed.
Mixed well then plated and sprinkle with the remaining peanuts and enjoy!
